Chocolate Chip Cookie S'mores

Ingredients

  • Canola oil
  • 3 bananas
  • 10 store-bought chocolate chip cookies (the larger the better)
  • 1 cup graham cracker crumbs
  • 1 cup small marshmallows
  • 1 cup chocolate chips

Directions

Preheat grill to medium-high heat. Brush grill with canola oil.

 

Cut the bananas in half, lengthwise and grill, skin side down just until warm. Remove warmed banana from the skin and cut again in half.

 

For assembly:

 

On a piece of aluminum foil, place 1 cookie. Top evenly with banana slices, marshmallows, chocolate chipsgraham cracker crumbs and top with another cookie. Wrap foil around the sandwich and place on the grill until warmed through and melted.


Grilled Banana S'Mores

Heat a grill to medium (350 degrees F). Leave bananas in their skins and make 1 slit down the length of each banana. Pack the slits with brown sugar.

 

Put the banana(s) on the grill and grill until soft and charred, about 5 minutes. Remove them to a cutting board and set aside to cool slightly. Peel the skins from the bananas and cut into 1/2-inch thick slices. Meanwhile, put the marshmallows on skewers and toast over the grill until brown and melty, about 2 minutes. You can also brown the marshmallows using a hand-held torch.

 

To assemble, spread some peanut butter on graham crackers and top with bananas and marshmallows. Cover with another cracker and serve. Enjoy!


Peanut Butter Cup Brownie S'mores

Preheat the oven to 350 degrees F. Butter a 13 by 9 by 2-inch baking dish.

Using an electric mixer, combine the butter and sugar in a large mixing bowl; beat at medium speed until creamy. Add the eggs, 1 at a time, beating well after each addition. Stir in the vanilla and mix well.

In a separate bowl, combine the flour, cocoa, and baking powder. Gradually stir the flour mixture into the butter mixture. Spoon it into the baking dish and bake for 35 minutes. Let cool completely, then cut into 16 squares.

Heat a grill or grill pan to medium heat.

Spread the marshmallow creme evenly over 8 brownies, and top with the chocolate covered peanut butter cups. Top with the remaining brownies. Wrap each brownie sandwich in heavy-duty aluminum foil. Grill for 4 minutes, turning once. Unwrap and serve immediately.
